Delicious Chocolate Cookies

Yesterday my son ask me to bake cookies. Actually last week pa nya nirerequest na magbake kami ng cookies pero dahil naging maulan last week hindi ko naasikaso bumili ng mga ingredients needed to bake chocolate cookies. Then yesterday naalala ulet ng anak ko ang cookies kaya napilitan ako magisip ng mga alternative ingredients para matuloy na nga yung gusto nya hehe.

I don't have the complete ingredients for chocolate cookies in our kitchen. What I did is I substitutes the two ingredients the first one is baking soda, instead of putting 1 teaspoon of baking soda I putted 3 teaspoons of baking powder, so hindi na ko naglagay ng salt since baking powder contain salt. But if you are going to use baking soda you may add 1 teaspoon of salt. And the second is the all-purpose flour.  For 1 and 1/4 cup of all-purpose flour I substitutes it to 1 cup of cake flour and 1/2 cup of 3rd class flour since those are the available flour in my kitchen.

Also I don't have chocolate chips ito pa naman ang main ingredients ng chocolate chips di ba. Luckily I have spare of dark chocolate, yun ang nilagay ko in exchange for chocolate chips. Here are the ingredients I used to make a delicious chocolate cookies.

Ingredients

1/2 cup white sugar
1/3 cup brown sugar
1/2 cup butter (melted)
2 small eggs
1 teaspoon vanilla
1 cup cake flour (sifted)
1/2 cup flour (sifted)
3 teaspoons baking powder
1/2 cup dark chocolate (chopped)

Instruction
  • Before starting mixing all the ingredients preheat the oven to 325 °F.
  • In a medium stainless bowl melt the butter in a medium heat. Once the butter is melted remove from the heat.
  • Add the white and brown sugar and mix. (you can use regular egg beater or spatula for mixing, no need for electric mixer)
  • Beat and add the eggs and mix until smooth. Add vanilla flavor and continue stirring.
  • Add the sifted cake flour, 3rd class flour and baking powder and mix.
  • Once mixed evenly you can now add the chopped dark chocolate and mix.
  • Chill the for 30 minutes to 1 hour.
  • Get the mixed ingredients and scoop using an ice cream scooper and put it in an oven pan with baking paper on it. (you can use a regular spoon then shape it into round)
  • Bake for 12-15 minutes.
  • Serve and enjoy!

Delicious Sinigang na Baboy

Sinigang na Baboy is one of the Filipinos all time favorite dish. Before I thought that this dish is very hard to do but I am telling you, this recipe the one of the easiest dish to make.

Sa pampaasim ng sinigang na baboy we can use the fresh green tamarind ito ang ginagamit ng mother ko na pampaasim pero ako I preferred putting sinigang mix lalo kapag walang nabili sa palengke na sampalok.

Ingredients

1/2 kilo pork (sinigang cut)
water, for boiling
3 medium tomatoes
2 onions
40 grams knorr sinigang mix (original)
3-4 pieces green chili (whole)
1/8 kilo cabbage
1/4 cup radish (sliced round)
5-8 pieces okra (sliced 2inches each)
2 cups kangkong leaves
salt and MSG to taste

Instructions

  • In a pot with enough water put pork, tomatoes, and onions, bring to a boil with a lower heat. 
  • Simmer for up to 1 and ½ hours or until pork is 
  • Replace meat bubbles if any then add more water if you desire more soup.
  • Once pork is tender add sinigang mix and green sili (don't slice) and simmer for 5 minutes. 
  • Add the radish and okra then simmer for another 5 minutes.
  • Add salt and MSG to taste adjust seasoning according to your taste.
  • Last add the cabbage and kangkong. Simmer for another 2-3 minutes.
  • Serve while hot.

Creamy Buttered Vegetables with Quail Eggs

My mother often cook creamy buttered vegetables with quail eggs whenever we are celebrating occasions like fiesta, baptismal, and other events because she believes that this dish keep visitors eat balance and enjoy the celebration.

Believe me ito ang unang nauubos sa handa ng mother ko kapag my occasion sa bahay. So let us check the ingredients and cooking procedure below.

Ingredients

1/2 kilo frozen mixed vegetables
20 boiled quail eggs (peeled)
3 garlic cloves (chopped)
1 medium onion (chopped)
250 ml all-purpose cream
1/3 cup water
salt and pepper to taste
3 tablespoon butter

Instructions

  • Sauté garlic and onion in butter for about 1-2 minutes.
  • Add the mixed vegetables continue sautéing for 5minutes 
  • Add the boiled and peeled quail eggs and mix.
  • Pour the all-purpose cream let it boil for another 5-7 minutes.
  • Serve and enjoy!

Perfect sa handaan ang dish na ito. Ingredients are not hard to find and the cooking procedure is very easy. Try nyo guys!

Yummy Tacos

The tacos recipe that I will be sharing here is my brothers' recipe. Hayyy nag crave tuloy ako sa tacos ngayon huhu. Medyo madalang kasi makita lahat ng recipe nito sa kitchen unlike sa ibang shared recipe sa blog na to kaya hindi ko basta-basta magawa for now magcrave nalang muna ko.

I know lots of you love tacos too. It is a traditional Mexican dish pero madalas sa mga kainan na nagooffer din ng liquor drinks dito sa pinas meron tacos sa menu nila even if it is not a Mexican food restaurant. Maybe because of the demand that's why they prefer to put tacos on their menu list. Okay lets check the ingredients and cooking instructions.

Ingredients

1/2 kilo lean ground beef
1 cup del monte tomato sauce
1/2 cup del monte ketchup
taco shells
1 cup shredded cheese
1/2 tsp cumin seeds
2 tbsp butter
3-4 garlic cloves (chopped tin)
1/2 head lettuce (shredded)
4-5 medium tomato (chopped)
2 onions (chopped)
mayonaise
salt to taste

Instructions

  • Saute chopped garlic cloves in butter.
  • Add the lean ground beef saute for 5-6minutes.
  • Add tomato sauce and ketchup.
  • Add the cumin seeds and salt to taste. Let boil for another 10minutes. Set aside.
  • Put the other ingredients chopped tomato, shredded lettuce, chopped onions, and shredded cheese in one big plate.
  • Ready the taco shell. Put 2 tablespoon of ground mixture (depend on the size of your taco) on top of it put a little of tomato, lettuce, onions and cheese and on top of those put some mayonaise.
  • Serve and Enjoy!

Yummy Leche Flan

Two hours ago I just did leche flan, may spare kasi ako ng egg yolks so I decided na gawin leche flan para hindi masayang. Isa pa favorite kasi ng anak ko yun, most of the time I buy leche flan in the market which cost 50 to 60 pesos each.

Since nasatisfied ang anak ko at ako mismo sa ginawa ko, ishare ko yung recipe. Nakagawa ako ng 6pieces of lecheflan on this recipe using medium llanera.

Ingredients

1 can of condensed milk (alaska para mas malasa)
1 cup of evaporated milk (alaska yellow)
1/2 cup of brown sugar
another 1/2 cup of brown sugar (para sa syrup)
2 tsp vanilla flavor
20 egg medium yolks

Instruction
  • Put the separated egg yolks in a big bowl and beat slightly.
  • Add the condensed milk next the evaporated milk and mix thoroughly.
  • Add the brown sugar and vanilla and mix well.
  • Filter the mixture using a clean cloth. (best way to have a smooth finish product) Set aside.
  • Put your molder or llanera 1 tablespoon each of brown sugar.
  • Put your molder or llanera on top of the stove and heat using low fire. Wait until the solid sugar turns into syrup or liquid.
  • Pour the mixture on each llanera with sugar syrup.
  • You can cover each molder using an aluminum foil but it is optional.
  • Steam for 35 minutes. Make sure before you put or steam the mixture, the water is boiling hard.
  • After steaming, let the temperature cool down then refrigerate
  • Serve cool. Share and Enjoy!

Delicious Cream Puff

Another pastry recipe learned at TESDA baking course. The puffs may left plain or be decorated or put some filling. It's all up to you what you want to put on it, ako madalas nilalagyan ko ng yema filling sometimes boiling icing, kasi my son loves sweet but I promise you even if it is left plain masarap talaga lalo sabayan ng coffee. Coffee lover din kasi ako guys. However I will share the ingredients and procedure of making a delicious cream puff.

Again super easy lang ng ingredients mostly nasa kitchen nyo na guys. Sa mga mommies na naghahanap ng pagkakaabalahan you can try this quick recipe.

Ingredients

1/2 cup (1 stick) unsalted butter
1/2 tsp salt
4 large eggs plus 1 egg (for the egg wash)
1 tsp sugar
1 cup all-purpose flour
1 cup water

Instructions

  • Ready two baking sheets with parchment paper.
  • Preheat oven to 375 degrees.
  • Begin combining butter, sugar, salt and 1 cup water in a saucepan over medium-high heat. Bring to a boil and quickly stir in the flour with a wooden spoon. Continue to stir until a film forms on the bottom of the pan.
  • Remove from heat and transfer contents to a bowl to cool slightly, about 5 minutes. 
  • Add 4 eggs, one at a time, stirring vigorously to entirely incorporate egg after each addition. 
  • For the egg wash, whisk together the remaining egg with 1 tablespoon water. Set aside.
  • Transfer the pate a choux to a large pastry bag fitted with a 5/8-inch plain tip. Pipe 1-1/2-inch rounds onto each prepared pan. Gently smooth the pointed peaks with a moistened finger, rounding tops to ensure even rising. Brush tops with reserved egg wash. Bake until puffs rise and are golden brown, about 30 minutes. Let cool on sheets on wire racks. Puffs can be stored at room temperature for up to 1 day.
  • Transfer pastry cream to a pastry bag fitted with a 1/8-inch plain round tip. Insert the tip into the opening of each pastry, and pipe to fill with pastry cream.


Siopao ala Chowking

Whenever I eat at Chowking restaurant I usually ordered siopao asado. I love their siopao asado so I tried cooking it, why not! hehe

Good thing the ingredients are easy to find in the grocery. Malamang nasa kitchen nyo na rin ang ibang ingredients. We will be having three sets of ingredients and instructions, one for the siopao dough, next is for the asado filling and last is for the sauce. Lets start!

Ingredients

Siopao Dough

250 ml warm milk (evap or fresh milk)
2 tsp dry instant yeast
2 tbsp sugar
1/2 tsp salt
1/4 kilo all-purpose flour
2 tsp baking powder
100 grams sugar
2 tsp vegetable oil
lime

Asado Filling

1 tsp canola oil
1 small onion, peeled and chopped
2 cloves garlic, peeled and minced
1 pound pork butt or shoulder, cut into large chunks
2 1/4 cups water
1/2 cup soy sauce
2 tsp oyster sauce
3 tsp sugar
2 star anise
1 tsp cornstarch

Sauce

1 cup water
1-1/2 tbsp cornstarch
1/3 cup sugar
3 tbsp soy sauce
1 clove garlic, chopped
2 tbsp white vinegar

Instructions

Siopao Dough
  • In a bowl, combine milk, yeast, the 2 tablespoons sugar and salt. Stir well until dissolved. Let stand for about 5 to 10 minutes or until mixture is foamy.
  • In a large bowl, combine flour, the 100 grams sugar, baking powder, and vegetable oil, Mix well. Add a few drops of lime juice into the flour mixture (to make the buns whiter).
  • Add yeast mixture to the flour mixture. Mix together until it forms a dough. Continue to mix and knead until the dough is smooth and no longer sticky. 
  • Cover with a plastic film and allow to rise in a warm place for about 2 hours or until double in size.
  • Remove the dough from the bowl, place on a clean work surface, and form into a long log. 
  • With a knife, cut the dough into 10 equal size pieces and then form each piece into smaller balls. Cover the dough with a damp cloth and allow to rise for about 30 minutes.
Siopao Filling
  • In a pot over medium heat, heat oil. Add onions and garlic and cook until softened. 
  • Add pork and cook, turning as needed, until lightly browned.
  • Add 2 cups of the water, soy sauce, oyster sauce, sugar, and star anise. Stir until well-dispersed. Bring to a boil, skimming scum that may float on top. 
  • Lower heat, cover, and continue to cook for about 1 hour or until meat is fork tender. You will have about 1 1/2 cups of liquid left in the pot. With a slotted spoon, remove pork from pot and let cool to touch. Using two forks, shred meat.
  • Remove about 1 cup of the braising liquid and set aside. Return shredded meat to pot and bring to a boil.
  • In a bowl, combine cornstarch and the remaining 1/4 cup water. Stir until smooth and cornstarch is dissolved. Add half of the cornstarch slurry to the pot of meat and stir to distribute. Continue to cook for about 1 to 2 minutes or until thickened. Remove from pan and allow to cool.
  • In a saucepan over medium heat, combine the reserved 1 cup braising liquid and the remaining half of the cornstarch slurry. Bring to a boil, stirring regularly, for about 2 to 3 minutes or until thickened. This well be the siopao sauce.
Sauce
  • In a bowl add water, cornstarch, sugar, soy sauce and garlic. Mix well.
  • In a saucepan over medium-high heat add vinegar and heat for 30 seconds.
  • Then add in the saucepan the cornstarch soy sauce mixture. Mix well and cook for 2-3 minutes or until it thickens up.
  • Serve with siopao. Enjoy!

Yummy Pancit Guisado


Pancit guisado is very popular to every Filipino. You can see and taste it almost in every occasion gathered by a Filipino family, especially in a birthday celebration. We have a saying “Pancit Pampahaba ng Buhay” (Pansit for a long life). I guess that’s why it is always served in the table in every birthday event.

Here’s my simple yet yummy recipe of pancit guisado.

Ingredients

1/2 kilo of pansit bihon
1/4 kilo of chicken breast
1/4 kilo of chicken liver
1/4 kilo of shrimp, peeled and deveined (optional)
2 cups water
2 tablespoons of cooking oil
4 cloves of garlic, minced
1 onion, chopped
10 pieces green bean
1 piece carrot (julienned)
1 piece cabbage (small cut)
1/2 cup of soy sauce
2 tablespoons of oyster sauce
Salt and pepper to taste

Instructions

In a pot, add the two cups of water and chicken. Let it boil and cook until tender over medium to low heat. Set aside the liquid (chicken broth) for later.
Shred the meat of the chicken and set aside.
In a pan, sauté garlic and onions over medium heat.
Add and cook the chicken liver and shrimp for two minutes. (if no shrimp it's okay)
Add the green bean and carrot. Let it cook for an additional two minutes. Transfer into a plate. Set it aside.
Using the same pan, add the soy sauce, oyster sauce and chicken broth. Let it come to a boil.
Gently toss the dried noodles in the simmering broth, until the noodles absorb the liquid.
Add in the mixed ingredients that you transfer into a plate.
Then add the cabbage. (it is good that it is not too cook or crispy)
Season with salt and pepper. Remove from heat.
Garnish with calamansi. 
Serve hot. Share and enjoy!

Yummy Nilagang Baboy with Mais

My mother teach me this recipe when I was in college. At alam nyo bang mas masarap ang nilagang baboy kapag may mais. We preferred putting sweet corn on our nilagang baboy recipe. It add sweet taste and blend in the great taste of the whole dish. Mas masarap to if you will serve hot.

Ingredients

1 kilo of pork
8 cups water
2-3 medium sweet corn (slice into 3)
1 medium onion, peeled and quartered
1 cube knorr pork cube
1 small calabasa, peeled, seeded and cut into 2inches chunks
8-10 pieces green beans
1 bunch pechay, ends trimmed and leaves separated
whole pepper 10-12 pieces
salt to taste

Instructions

  • In a pot over medium heat, combine pork and water. Bring to a boil, skimming scum that accumulates on top. 
  • Add onions, corns and the knorr pork cube. Continue to boil for about 3 to 5 minutes. 
  • Lower heat, cover and cook for about 1 to 1 ½ hours or until pork and corn are tender. 
  • Add more water if needed to maintain about 6 to 7 cups.
  • Add calabasa and cook for about 6 to 8 minutes or until tender yet firm. 
  • Add green beans, pechay, whole pepper and cook for about 3 minutes or until tender yet crisp. 
  • Season with salt to taste.
  • Serve hot with rice.

Boiling Icing

Boiling icing is one of the most in demand icing to use in decorating cakes and cupcakes. Share ko yung recipe na pinag-aralan namin sa TESDA. Perfect para sa mga gusto gawin business ang cakes and cupcakes. Hope you'll find it easy guys!

Ingredients

3 cups of refined sugar
1 1⁄3 cup of water
8 pieces egg white (large)
1 tablespoon cornstarch
1 tablespoon vanilla
½ teaspoon cream of tartar (COT)
food color (optional)
edible flowers (optional)

Instructions

  • Mix water and sugar. Bring to boil until become syrup and thread like forms (sticky).
  • In a large mixing bowl whip the egg whites with cream of tartar (COT).
  • Using an electric mixer beat the mixed egg whites and COT.
  • Gradually add the boiled syrup until soft peaks form.
  • You can divide the mixture and add different color and add some sweets to design.



Yummy Orange Chiffon Cake

Share ko lang yung recipe ng Orange Chiffon Cake na pinag-aralan namin sa TESDA. I enrolled baking course at TESDA last September 2018. This recipe is good for every beginner bakers since madali lang ang ingredients at procedure ng paggawa. Let's begin.

Ingredients

2 1⁄4 cups of cake flour (sifted)
1 cup of granulated sugar
3 teaspoon baking powder
1 teaspoon salt
½ cup salad oil or cooking oil
5 medium egg yolks
Juice of 2 medium oranges or 3/4 cup of orange juice or mirinda soda

Meringue Ingredients

1 cup of egg whites
½ granulated sugar
½ cream if tartar

First Mixture Instructions

  • First preheat oven to 325 °F.
  • Mix together the flour, 1 cup of sugar, baking powder, and salt into a medium mixing bowl.
  • Make a well in a center of mixture, then add oil, egg yolks, and orange juice. Mix evenly or until smooth.

Meringue Instructions

  • In a large mixing bowl whip the egg whites with cream of tartar (COT).
  • Using an electric mixer beat the mixed egg whites and COT.
  • Gradually add the ½ granulated sugar until stiff or peaks form.
  • Pour the first mixture gradually over meringue. (do the cut and fold method)
  • Grease the 6x2 pan and put baking paper.
  • Pour the mixture into the pan and bake for 65 minutes.
  • Serve and Enjoy!




Yummy Sopas

Sino bang aayaw sa sopas kapag umuulan. Ngayong tag-ulan pagaralan natin kung paano lutuin ang sopas. Perfect to i-food trip ngayong malamig ang panahon, this recipe help us feel warm. Let's check the ingredients and cooking procedure below.

Ingredients

1⁄4 chicken (any part)
1⁄4 ground beef or pork
½ piece cabbage sliced
1 piece onion diced
2-4 pieces hotdog sliced
½ cups carrots diced
12 oz. evaporated milk
1 ½ - 2 cups elbow macaroni
2 teaspoons minced garlic
1 piece Knorr Chicken Cube
7 to 9 cups water
3 tablespoons cooking oil
Salt and ground black pepper to taste

Instructions
  • Boil 4 cups of water in a medium pot. Add the chicken (chopped).
  • Cover and cook in medium heat for 15 to 20 minutes. 
  • Separate the chicken from the water. Let the chicken cool down. Set both chicken and water aside.
  • Heat oil in a large soup pot. Sauté the garlic until it turns medium brown. Add onion and carrot. Continue to sauté for 2 minutes.
  • Add the ground beef/pork. Stir and cook for 5 minute.
  • Add the chicken. Stir and cook for 1 minute.
  • Add the hot dog. Quickly stir for less than a minute.
  • Pour the water used to boil the chicken. Also pour the remaining water. Let boil.
  • Add the Knorr Chicken Cube. Stir. Cover and cook for 5 minutes.
  • Put the elbow macaroni in the pot. Cook for 10 minutes.
  • Add the cabbage. Stir and cook for 3 to 5 minutes. 
  • Pour the evaporated milk. Stir, let boil, cover and cook for another 3 minutes.
  • Add salt and ground black pepper to taste.
  • Serve hot and enjoy.
Note: you can add more water if needed.

Yummy Mango Graham

Mango graham is one of my favorite desserts. Also I love doing it because the recipe is very easy and it is quick to do.

Ingredients

3 packs Graham crackers
4-6 pieces Ripe Mangoes
2 250ml All-purpose cream
1 can or 300ml Condensed milk
crushed Graham crackers (for toppings)

Instructions
  • In a bowl, whip together the all-purpose cream and condensed milk. Use an electric mixer to double the volume. Set aside.
  • Slice mango. Set aside.
  • Put a layer of graham crackers at the bottom of a container or tray, fill the spaces or gaps with cracked graham.
  • Pour in whipped cream/milk mixture on top of the graham crackers.
  • Top the layer with slices of mango. 
  • Repeat the procedure until you get the desired number of layers.
  • Pour in the remaining cream mixture on top of the final layer. 
  • Decorate it with slices of mango and sprinkle with crushed grahams. 
  • Refrigerate to chill overnight before serve.

Yummy Laing with Susong Pilipit Recipe

Isa ang Laing with Pilipit na Suso sa mga favorite na ulam ko. High School na ko nung natikman ko ang recipe na to after that madalas na kong bumili nito. Kaya sinearch ko din ang recipe para makapagluto pag may time.

Ingredients

½ kilo susong pilipit
½ to 1 kilo taro leaves (dahon ng gabi) "dried"
4 cups fresh pure coconut milk
¼ cup bagoong alamang
3 thumb-sized ginger, sliced into slivers
2 medium-sized onion, sliced
½ head garlic, chopped
5 long green chillies, sliced
3 red hot chili, optional
3 stalks lemongrass, crushed
Salt to taste
Cooking oil


Instructions

  • Prepare the suso by washing and cleaning the dirt from it.
  • Soak it in water to extract dirt from the snail.
  • Change the water every 35 minutes.
  • Drain once the water clears.
  • In another pan, sauté garlic, ginger and onion.
  • Stir in the bagoong alamang and cook for about one to two minutes.
  • Add the lemongrass and taro leaves, sauté until fragrant.
  • Add three cups of the coconut milk, bring to a boil then add the clean snails.
  • Simmer for 20 to 30 minutes or until the liquid has reduced to half.
  • Add the remaining coconut milk, chili, then cook for another 10 to 15 minutes until the liquid is reduced to almost oily sauce.
  • Season with salt.
  • Serve hot with rice and enjoy!

Yummy Bulalo Recipe

Bulalo is one of the top recipes in the Philippines. This is best serve when hot and many people do crave in this dish when winter season.

Ingredients

2 lbs. beef shank
½ pc small cabbage whole leaf individually detached
1 small bundle Pechay
4 pcs Corn each cut into 3 parts
2 tbsp Whole pepper corn
1/2 cup Green onions
1 medium sized onion
34 ounces water
2 tbsp fish sauce optional or you can use salt to taste

Instructions
  • In a big cooking pot, pour in water and bring to a boil
  • Put-in the beef shank followed by the onion and whole pepper corn then simmer for 1.5 hours (30 mins if using a pressure cooker) or until meat is tender.
  • Add the corn and simmer for another 10 minutes
  • Add the fish sauce,cabbage, pechay, and green onion (onion leeks)
  • Serve hot with rice. Share and Enjoy!
