Ingredients
2 1⁄4 cups of cake flour (sifted)
1 cup of granulated sugar
3 teaspoon baking powder
1 teaspoon salt
½ cup salad oil or cooking oil
5 medium egg yolks
Juice of 2 medium oranges or 3/4 cup of orange juice or mirinda soda
Meringue Ingredients
1 cup of egg whites
½ granulated sugar
½ cream if tartar
First Mixture Instructions
- First preheat oven to 325 °F.
- Mix together the flour, 1 cup of sugar, baking powder, and salt into a medium mixing bowl.
- Make a well in a center of mixture, then add oil, egg yolks, and orange juice. Mix evenly or until smooth.
Meringue Instructions
- In a large mixing bowl whip the egg whites with cream of tartar (COT).
- Using an electric mixer beat the mixed egg whites and COT.
- Gradually add the ½ granulated sugar until stiff or peaks form.
- Pour the first mixture gradually over meringue. (do the cut and fold method)
- Grease the 6x2 pan and put baking paper.
- Pour the mixture into the pan and bake for 65 minutes.
