Yummy Pancit Guisado


Pancit guisado is very popular to every Filipino. You can see and taste it almost in every occasion gathered by a Filipino family, especially in a birthday celebration. We have a saying “Pancit Pampahaba ng Buhay” (Pansit for a long life). I guess that’s why it is always served in the table in every birthday event.

Here’s my simple yet yummy recipe of pancit guisado.

Ingredients

1/2 kilo of pansit bihon
1/4 kilo of chicken breast
1/4 kilo of chicken liver
1/4 kilo of shrimp, peeled and deveined (optional)
2 cups water
2 tablespoons of cooking oil
4 cloves of garlic, minced
1 onion, chopped
10 pieces green bean
1 piece carrot (julienned)
1 piece cabbage (small cut)
1/2 cup of soy sauce
2 tablespoons of oyster sauce
Salt and pepper to taste

Instructions

In a pot, add the two cups of water and chicken. Let it boil and cook until tender over medium to low heat. Set aside the liquid (chicken broth) for later.
Shred the meat of the chicken and set aside.
In a pan, sauté garlic and onions over medium heat.
Add and cook the chicken liver and shrimp for two minutes. (if no shrimp it's okay)
Add the green bean and carrot. Let it cook for an additional two minutes. Transfer into a plate. Set it aside.
Using the same pan, add the soy sauce, oyster sauce and chicken broth. Let it come to a boil.
Gently toss the dried noodles in the simmering broth, until the noodles absorb the liquid.
Add in the mixed ingredients that you transfer into a plate.
Then add the cabbage. (it is good that it is not too cook or crispy)
Season with salt and pepper. Remove from heat.
Garnish with calamansi. 
Serve hot. Share and enjoy!
