Delicious Chocolate Cookies

Yesterday my son ask me to bake cookies. Actually last week pa nya nirerequest na magbake kami ng cookies pero dahil naging maulan last week hindi ko naasikaso bumili ng mga ingredients needed to bake chocolate cookies. Then yesterday naalala ulet ng anak ko ang cookies kaya napilitan ako magisip ng mga alternative ingredients para matuloy na nga yung gusto nya hehe.

I don't have the complete ingredients for chocolate cookies in our kitchen. What I did is I substitutes the two ingredients the first one is baking soda, instead of putting 1 teaspoon of baking soda I putted 3 teaspoons of baking powder, so hindi na ko naglagay ng salt since baking powder contain salt. But if you are going to use baking soda you may add 1 teaspoon of salt. And the second is the all-purpose flour.  For 1 and 1/4 cup of all-purpose flour I substitutes it to 1 cup of cake flour and 1/2 cup of 3rd class flour since those are the available flour in my kitchen.

Also I don't have chocolate chips ito pa naman ang main ingredients ng chocolate chips di ba. Luckily I have spare of dark chocolate, yun ang nilagay ko in exchange for chocolate chips. Here are the ingredients I used to make a delicious chocolate cookies.

Ingredients

1/2 cup white sugar
1/3 cup brown sugar
1/2 cup butter (melted)
2 small eggs
1 teaspoon vanilla
1 cup cake flour (sifted)
1/2 cup flour (sifted)
3 teaspoons baking powder
1/2 cup dark chocolate (chopped)

Instruction
  • Before starting mixing all the ingredients preheat the oven to 325 °F.
  • In a medium stainless bowl melt the butter in a medium heat. Once the butter is melted remove from the heat.
  • Add the white and brown sugar and mix. (you can use regular egg beater or spatula for mixing, no need for electric mixer)
  • Beat and add the eggs and mix until smooth. Add vanilla flavor and continue stirring.
  • Add the sifted cake flour, 3rd class flour and baking powder and mix.
  • Once mixed evenly you can now add the chopped dark chocolate and mix.
  • Chill the for 30 minutes to 1 hour.
  • Get the mixed ingredients and scoop using an ice cream scooper and put it in an oven pan with baking paper on it. (you can use a regular spoon then shape it into round)
  • Bake for 12-15 minutes.
  • Serve and enjoy!

Delicious Sinigang na Baboy

Sinigang na Baboy is one of the Filipinos all time favorite dish. Before I thought that this dish is very hard to do but I am telling you, this recipe the one of the easiest dish to make.

Sa pampaasim ng sinigang na baboy we can use the fresh green tamarind ito ang ginagamit ng mother ko na pampaasim pero ako I preferred putting sinigang mix lalo kapag walang nabili sa palengke na sampalok.

Ingredients

1/2 kilo pork (sinigang cut)
water, for boiling
3 medium tomatoes
2 onions
40 grams knorr sinigang mix (original)
3-4 pieces green chili (whole)
1/8 kilo cabbage
1/4 cup radish (sliced round)
5-8 pieces okra (sliced 2inches each)
2 cups kangkong leaves
salt and MSG to taste

Instructions

  • In a pot with enough water put pork, tomatoes, and onions, bring to a boil with a lower heat. 
  • Simmer for up to 1 and ½ hours or until pork is 
  • Replace meat bubbles if any then add more water if you desire more soup.
  • Once pork is tender add sinigang mix and green sili (don't slice) and simmer for 5 minutes. 
  • Add the radish and okra then simmer for another 5 minutes.
  • Add salt and MSG to taste adjust seasoning according to your taste.
  • Last add the cabbage and kangkong. Simmer for another 2-3 minutes.
  • Serve while hot.

Creamy Buttered Vegetables with Quail Eggs

My mother often cook creamy buttered vegetables with quail eggs whenever we are celebrating occasions like fiesta, baptismal, and other events because she believes that this dish keep visitors eat balance and enjoy the celebration.

Believe me ito ang unang nauubos sa handa ng mother ko kapag my occasion sa bahay. So let us check the ingredients and cooking procedure below.

Ingredients

1/2 kilo frozen mixed vegetables
20 boiled quail eggs (peeled)
3 garlic cloves (chopped)
1 medium onion (chopped)
250 ml all-purpose cream
1/3 cup water
salt and pepper to taste
3 tablespoon butter

Instructions

  • Sauté garlic and onion in butter for about 1-2 minutes.
  • Add the mixed vegetables continue sautéing for 5minutes 
  • Add the boiled and peeled quail eggs and mix.
  • Pour the all-purpose cream let it boil for another 5-7 minutes.
  • Serve and enjoy!

Perfect sa handaan ang dish na ito. Ingredients are not hard to find and the cooking procedure is very easy. Try nyo guys!

Yummy Tacos

The tacos recipe that I will be sharing here is my brothers' recipe. Hayyy nag crave tuloy ako sa tacos ngayon huhu. Medyo madalang kasi makita lahat ng recipe nito sa kitchen unlike sa ibang shared recipe sa blog na to kaya hindi ko basta-basta magawa for now magcrave nalang muna ko.

I know lots of you love tacos too. It is a traditional Mexican dish pero madalas sa mga kainan na nagooffer din ng liquor drinks dito sa pinas meron tacos sa menu nila even if it is not a Mexican food restaurant. Maybe because of the demand that's why they prefer to put tacos on their menu list. Okay lets check the ingredients and cooking instructions.

Ingredients

1/2 kilo lean ground beef
1 cup del monte tomato sauce
1/2 cup del monte ketchup
taco shells
1 cup shredded cheese
1/2 tsp cumin seeds
2 tbsp butter
3-4 garlic cloves (chopped tin)
1/2 head lettuce (shredded)
4-5 medium tomato (chopped)
2 onions (chopped)
mayonaise
salt to taste

Instructions

  • Saute chopped garlic cloves in butter.
  • Add the lean ground beef saute for 5-6minutes.
  • Add tomato sauce and ketchup.
  • Add the cumin seeds and salt to taste. Let boil for another 10minutes. Set aside.
  • Put the other ingredients chopped tomato, shredded lettuce, chopped onions, and shredded cheese in one big plate.
  • Ready the taco shell. Put 2 tablespoon of ground mixture (depend on the size of your taco) on top of it put a little of tomato, lettuce, onions and cheese and on top of those put some mayonaise.
  • Serve and Enjoy!

Yummy Leche Flan

Two hours ago I just did leche flan, may spare kasi ako ng egg yolks so I decided na gawin leche flan para hindi masayang. Isa pa favorite kasi ng anak ko yun, most of the time I buy leche flan in the market which cost 50 to 60 pesos each.

Since nasatisfied ang anak ko at ako mismo sa ginawa ko, ishare ko yung recipe. Nakagawa ako ng 6pieces of lecheflan on this recipe using medium llanera.

Ingredients

1 can of condensed milk (alaska para mas malasa)
1 cup of evaporated milk (alaska yellow)
1/2 cup of brown sugar
another 1/2 cup of brown sugar (para sa syrup)
2 tsp vanilla flavor
20 egg medium yolks

Instruction
  • Put the separated egg yolks in a big bowl and beat slightly.
  • Add the condensed milk next the evaporated milk and mix thoroughly.
  • Add the brown sugar and vanilla and mix well.
  • Filter the mixture using a clean cloth. (best way to have a smooth finish product) Set aside.
  • Put your molder or llanera 1 tablespoon each of brown sugar.
  • Put your molder or llanera on top of the stove and heat using low fire. Wait until the solid sugar turns into syrup or liquid.
  • Pour the mixture on each llanera with sugar syrup.
  • You can cover each molder using an aluminum foil but it is optional.
  • Steam for 35 minutes. Make sure before you put or steam the mixture, the water is boiling hard.
  • After steaming, let the temperature cool down then refrigerate
  • Serve cool. Share and Enjoy!

Delicious Cream Puff

Another pastry recipe learned at TESDA baking course. The puffs may left plain or be decorated or put some filling. It's all up to you what you want to put on it, ako madalas nilalagyan ko ng yema filling sometimes boiling icing, kasi my son loves sweet but I promise you even if it is left plain masarap talaga lalo sabayan ng coffee. Coffee lover din kasi ako guys. However I will share the ingredients and procedure of making a delicious cream puff.

Again super easy lang ng ingredients mostly nasa kitchen nyo na guys. Sa mga mommies na naghahanap ng pagkakaabalahan you can try this quick recipe.

Ingredients

1/2 cup (1 stick) unsalted butter
1/2 tsp salt
4 large eggs plus 1 egg (for the egg wash)
1 tsp sugar
1 cup all-purpose flour
1 cup water

Instructions

  • Ready two baking sheets with parchment paper.
  • Preheat oven to 375 degrees.
  • Begin combining butter, sugar, salt and 1 cup water in a saucepan over medium-high heat. Bring to a boil and quickly stir in the flour with a wooden spoon. Continue to stir until a film forms on the bottom of the pan.
  • Remove from heat and transfer contents to a bowl to cool slightly, about 5 minutes. 
  • Add 4 eggs, one at a time, stirring vigorously to entirely incorporate egg after each addition. 
  • For the egg wash, whisk together the remaining egg with 1 tablespoon water. Set aside.
  • Transfer the pate a choux to a large pastry bag fitted with a 5/8-inch plain tip. Pipe 1-1/2-inch rounds onto each prepared pan. Gently smooth the pointed peaks with a moistened finger, rounding tops to ensure even rising. Brush tops with reserved egg wash. Bake until puffs rise and are golden brown, about 30 minutes. Let cool on sheets on wire racks. Puffs can be stored at room temperature for up to 1 day.
  • Transfer pastry cream to a pastry bag fitted with a 1/8-inch plain round tip. Insert the tip into the opening of each pastry, and pipe to fill with pastry cream.


Siopao ala Chowking

Whenever I eat at Chowking restaurant I usually ordered siopao asado. I love their siopao asado so I tried cooking it, why not! hehe

Good thing the ingredients are easy to find in the grocery. Malamang nasa kitchen nyo na rin ang ibang ingredients. We will be having three sets of ingredients and instructions, one for the siopao dough, next is for the asado filling and last is for the sauce. Lets start!

Ingredients

Siopao Dough

250 ml warm milk (evap or fresh milk)
2 tsp dry instant yeast
2 tbsp sugar
1/2 tsp salt
1/4 kilo all-purpose flour
2 tsp baking powder
100 grams sugar
2 tsp vegetable oil
lime

Asado Filling

1 tsp canola oil
1 small onion, peeled and chopped
2 cloves garlic, peeled and minced
1 pound pork butt or shoulder, cut into large chunks
2 1/4 cups water
1/2 cup soy sauce
2 tsp oyster sauce
3 tsp sugar
2 star anise
1 tsp cornstarch

Sauce

1 cup water
1-1/2 tbsp cornstarch
1/3 cup sugar
3 tbsp soy sauce
1 clove garlic, chopped
2 tbsp white vinegar

Instructions

Siopao Dough
  • In a bowl, combine milk, yeast, the 2 tablespoons sugar and salt. Stir well until dissolved. Let stand for about 5 to 10 minutes or until mixture is foamy.
  • In a large bowl, combine flour, the 100 grams sugar, baking powder, and vegetable oil, Mix well. Add a few drops of lime juice into the flour mixture (to make the buns whiter).
  • Add yeast mixture to the flour mixture. Mix together until it forms a dough. Continue to mix and knead until the dough is smooth and no longer sticky. 
  • Cover with a plastic film and allow to rise in a warm place for about 2 hours or until double in size.
  • Remove the dough from the bowl, place on a clean work surface, and form into a long log. 
  • With a knife, cut the dough into 10 equal size pieces and then form each piece into smaller balls. Cover the dough with a damp cloth and allow to rise for about 30 minutes.
Siopao Filling
  • In a pot over medium heat, heat oil. Add onions and garlic and cook until softened. 
  • Add pork and cook, turning as needed, until lightly browned.
  • Add 2 cups of the water, soy sauce, oyster sauce, sugar, and star anise. Stir until well-dispersed. Bring to a boil, skimming scum that may float on top. 
  • Lower heat, cover, and continue to cook for about 1 hour or until meat is fork tender. You will have about 1 1/2 cups of liquid left in the pot. With a slotted spoon, remove pork from pot and let cool to touch. Using two forks, shred meat.
  • Remove about 1 cup of the braising liquid and set aside. Return shredded meat to pot and bring to a boil.
  • In a bowl, combine cornstarch and the remaining 1/4 cup water. Stir until smooth and cornstarch is dissolved. Add half of the cornstarch slurry to the pot of meat and stir to distribute. Continue to cook for about 1 to 2 minutes or until thickened. Remove from pan and allow to cool.
  • In a saucepan over medium heat, combine the reserved 1 cup braising liquid and the remaining half of the cornstarch slurry. Bring to a boil, stirring regularly, for about 2 to 3 minutes or until thickened. This well be the siopao sauce.
Sauce
  • In a bowl add water, cornstarch, sugar, soy sauce and garlic. Mix well.
  • In a saucepan over medium-high heat add vinegar and heat for 30 seconds.
  • Then add in the saucepan the cornstarch soy sauce mixture. Mix well and cook for 2-3 minutes or until it thickens up.
  • Serve with siopao. Enjoy!
